I customized a Technician Service Form to show our logo on the form but how do I choose that new form when printing Tickets?

Your logo should be included under Tools > Options > Reports tab, this is how it'll appear on all reports without any customizations. Saying it differently - you do NOT need to customize a report in order to have your logo printed on reports.

In any case, under the Tools > Options > Tickets (Admin) tab, you can select a default report/form to be used when printing a ticket. Then again, this on its own is not required to display the logo.
