Is there any record in the data tables, or way to identify WHICH tickets were merged at some point?

Thanks!

Sure, technically the information about tickets that were merged is stored in the database.

Please note that when merging Tickets, a dedicated History record is added and you can find such records by applying the filter in the History window:

Hope this helps.

Semi-related: Can there be a history note option for linked tickets? We want to see when tickets were linked and unlinked to each other, and currently, there is no history for those changes on the system.

This is an interesting idea that I believe we hear for the first time. We'll take a note and consider. Thanks!
