So,

We offer managed backup services to our clients. They pay monthly and we provide them with monthly report and do test restore. So far we have been creating tickets manually each month for our techs to do this. This is non-billable.

The goal is to have tickets auto create each month. So if we have 30 managed backup clients, then goal is to have 30 tickets auto created each month.

How would you go about this?

I guess same thing goes for regular server maintenance. If client pays us to check their servers (weekly,bi-weekly,monthly,etc..) each month. Is there way to auto create these tickets, so we don't have to have one person spend hours each month putting these tickets in.

Thank you for asking. Yes, there is a way!

We assume that your managed backup services contracts, as well as your regular server maintenance one are managed using Contracts that are renewed on a monthly basis.

To each Contract you can assign an Activity Templates that will be applied when the Contract is renewed, e.g. applied on the one that covers next month.
(Use the 'Linked Activity Template' field for this, under the Contract's Details tab).

When configuring an Activity Template you can define ticket-Entries for it, and these will be used as the basis of the tickets that will be auto created on renewal. Done!
